Copper in comparison with stainless steel is much more chemically active: it binds sulfur compounds, hydrogen sulfide, acetals, ammonia, fatty, organic acids, which are a source of unpleasant taste and odors.
Copper stills allow you to get more flavorful alcoholic beverages, due to the formation of esters and aldehydes without compromising the original taste of raw materials, which is very important in the production of elite beverages like whiskey, cognac, calvados, etc.
Copper in the alembic is a catalyst for reactions that result in emergence of compounds (that have noble nutty, caramel, vanilla, chocolate and spicy undertones) in the aroma of the moonshine, which is similar in effect to aging in oak barrels.
The still significantly reduces the risk of mash burning because copper has huge thermal conductivity (the thermal conductivity coefficient of copper is 24 times higher than that of stainless steel!), due to which the heat is evenly and quickly distributed over all the walls of the alembic.
